The first 90 minutes in the 150°C oven was not enought (the middle was runny and only 63°C), but I wanted to sleep, so in the morning I baked it for another 60 minutes on 150°C and 30m on 200°C then I got this Halloween cake.

  • Someone more professional than I, please correct me if I'm wrong. But I thought you can't put baked goods back in the oven after they've cooled to a certain point because it won't do anything, or dry out/overbake the parts that were baked?

    If I read OP correctly sounds like they left the cake overnight then baked again in the morning?

    A second round of baking, after a baked item has cooled, does absolutely nothing for the product, except for turn the outside to charcoal and the inside to warm goo. If you plan to bake something twice (high temp to set the outside and lower temp to cook the inside) it needs to be done while the product is still in the oven and immediately after the timer runs out for the higher temp bake. If it’s allowed to cool completely before baking at the lower temperature, you end up with a charcoal outside and warm goo inside

    But that’s how you make biscotti. But in general yeah it doesn’t work out so well. Same thing with cookies if you realize after the batch cooled down that they are too doughy in the middle then it’s too late to bake them again. Microwave can sometimes soooort of rescue them.

    OP made a dairy free dairy keto cheesecake. Let’s all just back away slowly from this abomination.

    I'm lactose intolerant and I've had a lot of dairy free cheesecakes in my time. My best mate made an amazing mango one for my birthday one year.

    They're certainly possible, generally you use a recipe that's been formulated for dairy free.

    The keto diet works well for some allergies and medical conditions, unrelated to the actual keto diet itself. It’s okay for people to want to enjoy things that they might not traditionally be able to eat otherwise.

    I don’t know what recipe you used, for me I have found that is better when you look for special recipes instead of trying changing the ingredients I can’t have for another thing. And definitely the baking must have been crucial in the outcome in this case.

    I was allergic to milk most of my life and successfully used replacements all the time. You need to be conscious about the texture and chemical makeup (if heat can melt it etc), for example almond milk is much thinner than cows milk so for things like pudding that need to set I only use 2/3-3/4 cup almond milk for every cup of cows milk recommended.

    Now, this is interesting info! Like, I know that a recipe outcome can change in regards to fat/water ratio and percentage, but if in a recipe I read "milk (or ANY vegetable drink of your choice)" it bothers me, because at that point why not just use water instead of wasting milk substitutes? (They are so expensive where I live), vegetable milk density is something I did not consider!

    Why not just let people try to have desserts so they don't feel like they are depriving themselves of something they like, which can trigger a bingeing episode for some people?
