is there a "too long" to let the stock cook in the crock? the recipes i found online vary between 8 and 12 hours, but can it be 24? are there food safety or quality issues? i am trying to get it as rich and flavorful as possible with time and reduction as well as ingredients.
It looks like you're asking about Food Safety.
Only you are aware of all the factors involved in this situation. No one in this subreddit is qualified to give you advice about eating food that's left unattended, undercooked, etc. "If in doubt, toss it out." Food poisoning is a serious issue - it's particularly dangerous to older adults, children, pregnant women or people with compromised immune systems.

I do 24 every time - in fact, I’ve got one going right now
sprints to kitchen i appreciate your timely confirmation
There’s a dude on Instagram that has been keeping an eternal stew in his crock pot for almost a year now

I do 24 hrs always
4-6hrs High or 6-8 hrs Low, there are negligible gains from going any longer.
What type of stock? It seems like everyone is assuming chicken or beef based which 24 hours is nothing but something like veggie or fish can go too long. In those instances, I wouldn't go much more than 8-10 hours.
I watched a video yesterday of making stock in a pressure cooker. It takes less time but the guy let it go for many hours to see what would happen. Eventually you get gross flavors from the minerals in the bones.
