It totally works, just not as a crab rangoon. Call it crab puffs maybe. I think if the crab mix was homemade instead of store bought the flavors could be dialed in even better. But as a proof of concept, it works!
This particular dip was real crab, because I had to keep it gluten free for the wife. Crab stick/imitation crab has wheat in it. Though there is no reason that imitation crab wouldn’t be delicious in this - I just happened to pick one that I found at Costco!
Yuba sheets may work for this. I remember a Thai place that did fried dumplings wrapped in tofu skin. They called them golden bags, most other places did wonton wrappers but this one place did tofu skin and the texture of fried tofu skin was divine
In the spirit of ’not crab Rangoon’ there’s a Mexican dip we always got at sushi places called salsa Tampico. It’s crab/surimi, mayo, cream cheese, jalapeño, and a little sesame oil finely chopped together. That inside fresh masa (which is also gluten free) and fried or air fried, would be delicious.
