  • Troubleshooting q: If you get new beans you've never brewed before and the outcome is more sour than you expect (no sour notes expected based on description by roaster)... What is your first corrective step?

    If the cup is sour, you’d assume it’s under extracted; grinding finer is usually the first place to start but you can also increase extraction with higher temperature or more agitation.

    Awesome ty! I've been making dark roast for a long time, I know I know... Tried a black and white "the classic" for the first time and my 1st cup was okay, but this morning was very sour and I'm sure that's why because I used cooler water and larger faster pours. Thank you!

  • Has anyone here ever tried the Kopi Luwak coffee featured in the Bucket List movie? Curious what it's like.

    I've had some that was highly reputable, certified, wild collected, etc... and did not find it to produce a high quality cup whatsoever.

    Luwak is a very mild coffee, easy to brew adequately well. I wouldn't call it a standout in any way. There are plenty of better trinkets to stash in your life bucket, if the point is the squeamish thrill of ostensibly eating animal scat. Warthog anus, as Anthony Bourdain did that one time, is straight to the point. Somebody makes elephant poop coffee. It's very expensive, and part of the proceeds go to an elephant welfare charity, as I recall. The civet scat thing approximates to animal abuse, and isn't even very exotic any more; everybody knows about it. It was covered pretty well in this sub last year.
