A Merino sweater makes an excellent midlayer with a dressier look than fleece. Cashmere is wonderful and reportedly warmer for the weight. I do for for fleece for highest performance. I usually wear my midlayer on the plane so bulk is not an issue.
The warmth to weight with fleece is good. I like light Merino sweaters for cool weather but warmer versions get heavy and are bulky to pack.
There some line where fleece has better performance. It’s easier to launder and dries faster. The Patagonia R1 full zip jacket is my favorite. Sweater weave fleece has a good look but is nearly as bulky and heavy as a thick Merino sweater.

Nice! for winter travels I run very similar layers. For fleece north face future-fleece is great & light.

You'd save space with less baggy pants. Unless they're your only pair so you wore them all the time.
