Well, I filled some nail pops once and in my opinion he needs to clang the trowels together now and again...you know, like you do with a metal spatula against a cast iron pan. It's all about the clang in these situations.

Ha! Guilty. I mentioned to another comment that I don't know why he's using a second trowel to hold mud instead of a hawk. He could hold multiples more mud with a hawk. I'll say he does know what he's doing though.
I am not a drywall professional but I’ve done my share of it and worked plenty of residential construction gigs in my time. This guy is doing a pretty good job. The joint is going to be clean and not require a lot of sanding.
Anyone can make a drywall joint clean and smooth. It’s just that most of us will be doing more than one mud coat, and sanding until our elbows give out. The pros are FAST.
This person is absolutely going slow for the video too. The way I have heard it said is hiring drywallers isn't cheap. But its even more expensive to do it yourself. Mostly because of how fast a small crew can knock out an entire house vs a general contractor with a full crew.
The only thing I saw, as somebody else mentioned, is that he might not have quite enough compound in the entire length of the joint. Yeah, there were some places he pushed some into it, but not along the whole length.
Paper tape is stronger (counter-intuitively). It's harder to work with though, so that's why mesh tape is popular. Plus, even if it does crack, the paper tape has a chance of hiding it (if it's below the surface) versus the fibertape will show through.
There's another product called "fibafuse" that is stronger than mesh that a lot of people on /r/drywall like. The benefit of any mesh/fiberglass is you can see through it and see if it's embedded correctly, so there's no gaps (and can push mud through it, if there are gaps/problems).
It's suggested to use "hot mud" when using mesh instead of all purpose (AP) joint compound. AP takes about 24 hours to dry, but "hot mud" or "quick setting" mud (sold as "easy sand" in the USA or "durabond" elsewhere) has a drying/setting agent in it and it can set up in as fast as 20min or as slow as 90min based on which product you buy. It shrinks less than AP mud.

Working in a remodel of a house that didnt have a straight/flat wall in the place.
Drywall finisher said that he could skim coat and get it looking decent. Guy stood about 6'5, long reach obviously. The room I watched him work in had high ceilings; He used about 5, five gallon buckets stacked on top of one another.
He would stand on top of them, and shimmy his way across the room, never stepping off the buckets. Just as quick as the guy in the video skim coated, he was shimmying & skim coating the entire time.

WRONG WRONG WRONG !!! It’s bad to spread compound on drywall because compound is too heavy, doesn’t bond properly to the paper surface, and contains moisture that can warp or damage the drywall. Drywall flexes slightly while cement doesn’t, so the cement will crack or fall off over time, and the weight can even pull sections of drywall loose. Overall, it leads to poor adhesion, structural issues, and messy rep.......... Just kidding, fine work.
The real pros aren't using a trowel to apply the tape. They're using paper tape applied from a banjo or from a bazooka. When coating flat seams or nails they're using a mud box on the end of a stick. That being said this guy is pretty good at what he does and how he does it. He just needs to bang his trials together a few more times.

The pros are so fast at drywall so that’s a job I usually hire out instead of diy. Very impressive so see the skill advantage in that trade.

Shit man. As a DIY (or DIWhy) guy I know that this is AMAZING. That stuff never works well for me. I've got the gloppy drywall seams to prove it.

Mesh tape cracks when you don't use the right mud. You have to use hot mud on mesh tape.
Mesh tape allows you to skip a coat compared to paper.
