Assuming that the second piece is the same thickness as the first, that's as far as it's going. There isn't a stepped offset there, it is just bending the cut sections inward. To get tighter, the second piece would have to flare out

Zinc fumes are bad for you. Which is probably pretty obvious, but it only takes a little zinc to develop noticeable symptoms.

At this point I’m just welding bits of rust back together. It’s a bizarre frankenstein of wooden panels, random reinforcement metal I have lying around, and the hopes and payers of whoever’s driving behind me. It could have been entirely zinc at one point, but at this point in the ship of theseus it’s probably safe to work on for anyone with a tetanus shot

You definitely can weld galvanized metal, there's just extra concerns to worry about.

The fumes from galvanized materials are especially toxic and will give you zinc poisoning if you breath them. You'll also need to deal with coating/painting/treating it because you'll have stripped the galvanizing later away and it will rust.
