Every time I order a steak it a restaurant I’m disappointed. I would rather buy a good ribeye and grill it at home. With my wife’s s salad, a toasted roll and maybe some air fried potatoes, it’s great.

I feel like when I'm at a restaurant and I order medium rare, it comes blue. And when I order medium, it comes well done. So I stick to cooking it myself at home.

Brisket I cook to 203F internal. Last one took 23h in 220f smoke, then another 19h in 225f oven. No wrap. I love the bark.
