Try hot pink for enemy highlights. It's not immersive at all, but I learned from other games that hot pink/bright teal stand out from most environments much better than red/green. (But also, fighting a giant hot pink Hunhullus during the Old Peace was not immersive at all, so use with caution, LOL.)
I turn highlights off during quests. I saw a giant red hunhullus and figured i should probably turn off highlights for quests.
