She may also just confused the pedals. Looks over her right shoulder shifting her body weight from the accelerator. Removes foot off that pedal and instead of hitting the brake, continuing to look back, hits the accelerator a second time. It makes sense in my head.

You're not really supposed to just have your foot resting on the clutch or the brake was my point. There's a little foot rest to the left of the clutch pedal for that purpose.

Gas-break modulation is also used in pitting and depending on car may be used in high speed driving.
It’s mostly a way of defeating the ESC in modern vehicles which is normally good but may work against you if you’re already losing traction.

I drive a 2017 Honda Accord with a 6-speed manual.
Before this I owned a 1997 Saturn SC-2 with a 5-speed manual.

Using both feet is a legit and necessary technique in hilly places with automatic transmission but she shouldn't use it on flat ground, of course.
