Memphis production is all about that grimy lo-fi feel - try running your samples through some tape saturation and don't be afraid to crush the dynamics a bit. For the vocals, UGK and OutKast were hitting different studios but both used a lot of analog compression, maybe try the 1176 plugin if you got it

1176 is a game changer for vocals. There are several software versions of it and they're probably all pretty good.
Second mention I’ve seen. Just saw there is a $500+ down to $80 dollar bundle deal that includes it on Sweetwater. Just copped it!
