I bought a $20 pork loin at Sam's Club today. I sliced it into two roasts and about six chops.
Pork Loin * Rub olive oil on all sides * Add spices (salt, pepper, garlic powder, onion powder, paprika, oregano, and rosemary) * Roast at 425F for 35 min or until internal temperature is 140F. * Let it rest for 10 min for it to come up to 145F
Cauliflower Mash * Two medium heads of cauliflower, cores removed * Pressure cook on high for 10 min until tender (you can also boil, bake, microwave, etc.) * Drain well in colander * Add back to pot * Add 8 oz cream cheese * Add 8 Tbsp butter * Add 1 cup of cheese (I used a blend of parmesan and asiago) * Mash well (I used an immersion blender)
Gravy * Add 1 cup of pork loin pan drippings * Add 4 cups of water * Add 8 Tbsp butter * Bring to boil * Whisk in 2 tsp xanthan Gum * Whisk well until it thickens (it will thicken more as it cools)

With cheese and spices I'm pretty sure it was under $30 and I'll probably get about 8 servings if not more.
I picked up the xanthan gum at Walmart in their baking aisle.
My wife loves when I make this for her.
I always buy pork loin when it's BOGO, cook both, and shred one of them for pork quesadillas (or as my son calls them, 'porksadillas').
I used to shred pork loin, but I've recently been buying pork butt for shredded pork. Now pork loin is exclusively pork roasts and pork chops!
Oh yeah. I don't pay attention to which it is, loin or butt, just whether I can get two for one. Usually it's loin though. =-)
Are you sure that it is a loin, not tenderloin? It looks too small for a loin, and price is big?
It's definitely pork loin, not tenderloin.
I bought a whole pork loin and cut it up into the two roasts in the first image as well as 6 pork chops or so. It was about 8 lbs at $2.48 per lb.
Tenderloin is generally thinner and comes two to a package vs one huge piece from Sam's Club.
The two roasts you see in the first image are about 10-12 in long and about 3-4 in thick.
