They're not really 'zombies', though. They just play on the idea of zombies, but it's not undeath so not zombies.

It is. Most of the games have an area where you can kill at least basic undead with Phoenix Downs.
You could also do the same with the Gi Nattak boss in FF7... Either that or defeat it using White Wind, an X-Potion or Full Cure abilities.
