I’m so tired of them texting me and claiming I was never a real Christian to begin with. That’s really drives me mad! I mean I love to argue with them cause they always brought up weak arguments till now.
My personal favorite is when they claim that I was never a true Christian because I left my faith.
You can at first reply them how you were a former Christian and if they insist in their arrogance, then you’re free to block them.

You firstly said it is annoying and now entertaining. It’s confusing, because it seems a contradiction to what you said earlier.

Because even if you succeed, what you've done is reinforce their idea that the non-Christian world is mean and cruel and out to get them. Even if they lose, they still win because you've simply pushed them deeper into the religion.
The only answer is to not engage at all. Simply block them without ever saying a word.

I think most of the time Christians just get defensive of their own faith because they know it’s weakly held together as well so they have to project for the own crumbling dam in their own heads. Religion is also a form of hypnosis and has different levels of indoctrination too. The responses are textbook in terms of psychology. Damn it feels good to be out of that.

There's value in those conversations sometimes but typically only in public. You're unlikely to gain any purchase with folks one on one like that. Arguing with Christians mainly helps those watching, since they're not necessarily decided on the issue. Just a point you might consider if you want to make your conversations impactful.
Oh, and "no true Scotsman" is something you can call as a fallacy but they won't believe you. They really think that a true Christian must be one who follows forever, so they'll believe that you must not be. It's less "no true Scotsman" in their mind than "you literally don't meet the definition of Christian."
If you really want to fight back, perhaps use their bible or whatever they believe to counteract...
Matthew 7 says "Judge not, that ye be not judged." Perhaps their god never said such things to you, how dare they play god's role? They think they know better than god?
If they really want you to return, judging/criticising is definitely not the method. That only proves leaving the belief is the right decision.
Block them. Nobody is owed your attention. Their behaviour is a reflection of them, and not a reflection of you.
I have to ignore them. Not only is it triggering, I’ve made the mistake of trusting people in this subreddit to have healthy discussions about life after leaving the church & the trauma experienced during my years in the church. It ending with receiving death threats—and that’s just from fellow ex Christian’s that are SWERFs. So the ones that are like “bless you and your family yada yada yada” I don’t even give the time are energy to. I know they aren’t in a headspace to hear my truth if they didn’t read my comments or posts critically to begin with.

I’ve yet to meet a real Christian. It’s always been secular politics dressed up in pseudospirituality. That I was also never a real Christian is a point I’m willing to concede.
If a Muslim becomes a Christian, does that mean they were never a true Muslim?

I've never gotten any Bible thumping DMs, or rather they weren't overtly proselytizing. Maybe they were gonna hit me with Jeebus after I replied. Have since turned DMs off.

You don't owe them an explanation, or anything at all. They're deluded to begin with, that's why they're still trapped in their religion, but you fortunately saw the truth of it and got out. They don't know you at all, they assume everything based on their insane scriptures.
If I were you, I would just ignore (block) them and write them off as just as irrelevant as their barbaric bronze age belief, move on with your life and don't let them drag you down to their miserable level. YOU know the truth of your experience in Christianity, that you really did believe and try to follow Jesus to the best of your knowledge and ability, I would bet on it. These people have no clue. So, fuck em. Full stop.
And maybe don't make sport of them lol that will just feed their persecution complex. Have a respectful back and forth to a point but know when to shut it down and move along. Indoctrination is a HELL of a drug.
Wasted energy trying to argue with them or dismantle any arguments. They'll never change their mind and even if they do, it won't be because of an argument with a stranger on Reddit.
They have to say we were never true Christians because to acknowledge we were would be to admit that they too could one day leave.
