You are skipping so many important steps. Did you even degauss the portafilter? What about the fluidized column for declumping the grounds? Your lever machine seems to be using the same water for pre-infusion as for actually pulling the shot. For best results you need to pre-infuse with deionized water, high vac vacuum dry, then pull the shot with extra-mineralized water. This takes at least three espresso machines and needs to be done robotically to make the timing close but it’s worth it to get the crema to the ideal 1.05 mm thickness.
If you are serious about making good coffee you should also be running a GCMS on the beans before and after grinding.
I achieved the same effect cheaper by putting my entire setup (+butler) in a large centrifuge to simulate 10% higher gravity. I got it surplus from NASA and only had to make a few upgrades after it got airlifted in.
The machine needs a base plate of pre-famulated amulite surmounted by a malleable logarithmic casing in such a way that the two spurving bearings can be in a direct line with the panametric fan.
Why not have a step where the machine drinks the espresso as well
