Maybe take a file to the end to clear off the burs after you've taken the nut off, but cutting bolts with a grinder doesn't make it hard to take nuts off usually. If it was cut off before the nut was put on, you'd have to clean up the ends before you could put on the nut, but the way they did it works fine, except for the whole "why the hell would you want to do that in the first place" part and how it won't be any kind of comfortable and the way it predictably gouged the leather.
Basically just saying that the cutting off the bolts part was done the right way, even if none of this should have been done.
