Man! I have used poblano for years in my chili because I really liked the earthy flavor. I never considered ancho chilis. I relied on chili powder, poblanos, and cumin. You gave me something to think about.
It can get confusing sometimes because the names of the peppers change when they’re dried. Anchos are dried Poblanos, Chipotles are dried jalapeños, etc.

You have to simmer the chili after you mix everything together... Not done yet bud

Interesting. Next time maybe try using canned Pinto Beans since you dislike kidney beans. Bush makes some good ones they call them Chilli Beans.

I know what Ranch Style Beans are just never heard them called Ranch Beans. If I'm going to use canned beans in my chili I use these.
