Same! Guinness is my favorite in chili too, but it’s also my favorite beer, so I have to hide it from myself if I want to make chili with it. Same goes for the oatmeal stout. I usually end up adding an Octoberfest, an amber ale or a lager. lol
A pale ale or an easy drinking pilsner. Maybe something like a Modelo or even something really easy like a Budweiser. Nothing dark like a stout. I tried a Guinness and the chili came out way too bitter. Whatever beer you use should be subtle and in the background. It should never dominate in the chili.
I agree that any beer added should not dominate the chili; however I disagree that using a dark ale such as a stout will necessarily do that, although it can certainly be mismatched with a particular chili’s overall flavor profile and chile seasoning blend. A dark ale should only be used with stronger, darker chile powders such as Pasilla Negro.
Well, the chili I made using the Guinness could not be saved. It turned out way to bitter and no amount of acid or sugar could balance it out for my palate. If my memory is right, I believe I was using some guajillo and pasilla chilies.
Never dominate, yes. But I've found that the best chili contains amplifiers in sweet, sour, bitter and umami. Thus, we tweak near the end according to the taste at that moment and the choice of beer is part of that equation. Our main tweaks are salt, chocolate, maple syrup, balsamic vinegar, lemon juice and we add and taste each ingredient. When we've used dark and malty, the tweaks end up different than when we've used something like Corona.
It depends on a variety of factors. However I usually use either a good lager or occasionally a dark ale. Usually a bottle of Shiner Bock or Coors Banquet is just fine with me. For dark ales, a Deschutes Black Butte Porter is an excellent choice.
That's actually a good thing, You don't want the beer flavor to stand out. The right beer should just be an undertone that makes the flavor more complex. If you can actually taste the beer, you did it wrong.
I’ve only ever tried a few times and never put a lot one time I did pbr, once a pils from the brewery I worked at, and another time I did modelo basically light beer. I’ve wanted to try something dark but I worry it might make it too sweet and I don’t like sweet chili, sorry everyone in advance!
I start all of my chili with Shiner, 3-4 totally skip the beef broth

Negra Modelo is just a dark lager, though, so it's not the same as all dark beers (stout, porter, etc).
I'd easily put Negra Modelo in the top #3 beers for chili.

Shiner Block seems to be a popular choice, will have to try that next time. Got some Modelo Negra for this batch though.

Beer doesn't do much for me in chili. I've tried stouts and porters. I put so many spices and chilis in my chili that I don't get any of the beer.

I scored a case of bourbon county coffee for cheap a couple years ago, so I've been using that or the regular.

Using only stock will still make good chili, ive just heard a lot of people use some kind of beer too. idk how much of a difference it makes tbh

In the fall, I go with New Belgium Atomic Pumpkin. When that is not available, I tend to go with Deschutes Black Butte or Samuel Smith Chocolate.
Guinness, but a good malty beer will work fine. Corona has also been a fine choice but doesn't add nearly as much character.
