Why did not the opposite take the horse
Idk, keep in mind that the ELO rating of the game was around ~350 lol. Maybe he didn't wanted to lose the rook

Yep, he could have taken it a couple moves before
because Nh6+ is a double check, if Black takes knight its still in check by the queen
How is it a double check?
I see knight defends the queen, but not attacking the king?
Rook takes queen. Horse takes rook, king takes horse?

by double check i meant that in the previous move the knight most likely was on f7 and king on g8 and then White played Nh6+ double check
