Cheese that I aged 365 days. Put in the cheese cave the day I got married. Cheese opening ceremony in a few days when we go out of town for our Christmas trip.
No wrap, no wax. It was one of my smoothest cheeses after pressing I’ve ever made. Early days, I carefully made sure the rind dried properly (without cracking) and then I brushed it every few days. I kept it in a container with small holes for some air exchanges. After a few months, nothing was growing anymore. I haven’t brushed it in like 7 months now and flipped every 2 weeks
Hey. happy anniversary Trick. Brill effort on that wheel.
Thank you!
was it wrapped? waxed? if not how did you get that rind

dank dude. nice work.
making cheese right now - letting the milk heat up to add the culture.
Good luck! Exciting! I’m thinking what to do next too. Thank you :)
