Generally speaking, 'slashing' attacks are the kinda neutral physical damage type, whereas poking attacks are thrust, and things like the transformed Kirkhammer are blunt.
That said, check Bloodborne-wiki.com for individual weapons and their moveset. A weapon can deal different types of damage depending on which actual attack you're using. For example, the transformed LHB is almost exclusively blunt except for its R2 which is thrust and maybe another move or two.
A very famous thrust weapon is the Church Pick, which is pretty much exclusively thrust transformed.
Gems and weapon variants and stuff have no impact on what type of damage a weapon does, aside from elemental gems turning physical/blunt/thrust weapons into elemental damage.

If there was a comprehensive table as to this stuff, that'd be great, but I can't find out where to look for this information on the wiki. You can check what damage types a weapon does by going into your inventory, highlighting the weapon and pressing square. If it does blunt or thrust damage you’ll see it listed there. Keep in mind that just because a weapon has blunt or thrust damage listed doesn’t mean all of its attacks deal that type of damage. It’s dependent on the move. But generally if the attack is with the edge of a blade, it’s regular physical damage, if it’s a stabbing motion, it’s thrust damage, and if you’re smashing with something hard (boom hammer, tonitrus, Logarius wheel, etc) it’s blunt damage
Rifle Spear, Church Pick, and Rakuyo transformed R2 attacks are thrust damage, personally i like Rakuyo, the transformed R2 are fast like regular attacks and they are all thrust attacks, i keep mine with Bolt elemental gems to farm Kin enemies like the Brainsuckers and the Emissaries in Isz Root Chalices, it's pretty fun.
All weapons do physical damage. Physical is broken down into normal, thrust, and blunt depending on if the individual attack is a slash, stab, or bonk.
Most weapons deal a combination of damage types depending on the form of the weapon and its move set.
Exampe 1: Threaded Cane
In cane form is a blunt weapon that bonks. In whip form, it slashes. Its cane heavy attack and whip-to-cane transforming attack is a thrust.
Example 2: Blade of Mercy
Deals slashing damage and arcane damage in both forms. Dashing r1 and backstep r1 deal thrust damage.
Example 3: Reiterpallasch.
In default form, most attacks are thrusts with a few slashes here and there. Transformed, is mostly a slashing weapon with a pistol shot heavy attack.
Tontius's bolt buff will do a lot of work on Ebrietas. Your going to trade head blows for more consistent damage over all.
Why are you excluding so many options? L2s and R2s have some amazing attacks and you rule out backstabs as well. Tools are excellent against Ebby, assuming you have invested in the correct stat. Gems do not change whether a weapon does blunt/thrust/standard, but they can definitely change physical damage to bolt, which is quite good for Ebby.
I know that the threaded cane is a thrust weapon and righteous dmg in it's normal form and serrated in trick form. The church pick is thrust dmg in normal mode and both righteous and serrated in both modes.
Most normal weapon damage is physical to my knowledge. Arcane, bolt and fire are non-physical, everything else is physical

A bunch deal 2 different types of damage in their R1 combo. So a lot of them. And not using R2/L2 is really limiting.
Short answer, church pick has a lot of thrust moves and kirk hammer(hammer mode) deals blunt
Yeah, I'd think the more limitations I place, the simpler the information I'm looking for would be, but alas.

The church pick doesn't deal serrated afaik
It has a built in beasthunter bonus which is better than serrated cause it applies to a wider selection of enemies
