I own both those bikes. Have done two partials of the gdmbr on the cutthroat. Dropped in Pinedale. Theres no way I’d take the grizl.
I run 32x11-51 on the cutthroat. Need all those gears. And a front shock. 2.25 -2.35 tires.
32 dang, I have 36 x 10-51 on my Grizl Escape. Might go down even further on the chain ring after hearing that.
I don't think gearing is an issue when comparing Cutthroat to the Grizl ESC - standard sure.
But you can definitely get bigger tires on the cutthroat. I'm running 52mm currently with max claimed width of 54mm from Canyon. I want to do the GMDR eventually. Think 54mm is enough?
Sounds like the grizl escape is much beefier. 54 would probably be fine. Most people have to buy new tires at some point. I tore a side wall on day one it lasted a few more days.

I assume you are talking about the Grizl ESC. I own it and love it and want to do the GMDR on it in the (hopefully near) future.
That being said you can get bigger tires on the Cutthroat and more universal accessory options, and just more accessories are already made for the Cutthroat. I love the Grizl and plan to make it work. But I think the Cutthroat is the easier and potentially better option. mainly because of the Tire clearance.

Sure, there might be 1000 miles of paved, probably less unless you take alternates, but much of the rest of the route is bone jarring, teeth clacking, butt bruising rough ass shite roads. No way I'd run rigid after having done it with front suspension and still cursed sections as being the worst option when they defined the route way back when. Though I have drop bar bikes, I think you'd be better off buying a cheap hardtail for the route and just flip it once you're done. Handlebar width is immensely helpful in endlessly picking lines through minefields.

You will have much better components for the less price with canyon.
Yes you would for, I think, normal gravel riding, but if they are going GDMTB I would go with what is tried and tested.
I agree. And I really like the dynamo charging with USB C outlet. But a solid power bank would probably serve well too.
