For a long time, food never really felt filling to me. I used to eat lots of fruits and vegetables and still feel hungry. I’d have a humongous bowl of salad, with lettuce, cucumbers, zucchini, tomatoes, and whatever else I could find. Five minutes later? Still hungry. Another bowl, still hungry. A third bowl… and then diarrhea the next day! Sorry, TMI.

I added fruit, apples, oranges, berries, etc. Things didn’t improve much, though the sweetness helped a bit with the sense of satisfaction.

Then I tried protein bars, which turned out to be a disaster. I ended up eating almost twice as much food, and protein bars aren’t exactly volume-friendly. Still, I did notice that I felt more full than when I ate only salad, so that part was at least telling me something I didn't know.

Things stayed like this until recently, when I discovered the potato-and-egg combo. I had avoided potatoes for years because they seemed boring. The only potatoes I ever ate were fries but never boiled or baked. And always from fast food joints, as I rarely cook.

Then one day I tried them, and I’m so glad I did.

I started making potatoes more “exciting” by adding herbs and spices, and sometimes experimenting with unusual combinations like honey, cinnamon, mayo, mustard, cheese, garlic, pepper. None of those are strange on their own, but I mixed them in different ways, which made potatoes lot more tasty.

Eventually, I realized I needed protein, so I added eggs. That’s when something clicked. For the first time, I felt like I had eaten something truly filling, like substantial, healthy, and delicious.

I’ve noticed that different cooking methods work well, especially boiling and baking (frying, not so much). And as someone who sucks at cooking, potatoes and eggs are incredibly easy to make. With all the ways you can cook and combine them, it never feels boring anymore, there’s always something new to try.

SO the moral of the story is if you suck at cooking like me and if you find potatoes and eggs boring, don't let those reasons stop you from trying them. You are missing out! Just try it a couple of times. What do you have to lose? Fine, you're big on salad, that's cool, just put some boiled and cooled potato pieces in your salad. Or eggs. Experiment with herbs and spices. Try it.

  • My favorite meal (and volume friendly) for breakfast is russet potatoe shredded, with lots of onion powder S&P, topped with turkey/chicken breakfast sausage, and then covered with egg beaters egg whites. The egg beaters is a bit more expensive but the added flavoring adds no calories and makes egg white way better. I can usually get this meal around or over a pound of food for less than or around 500 calories. I usually add some of my favorite hot sauce for zero calories and I'm good for hours.

    250g potatoes ~ 200 calories

    1 turkey sausage patty 50g for 90 calories

    5 servings of egg beaters 235g for 125 caloires

    1 pound ~ 450ish grams

    Sounds great! Beaters are underrated. When I make eggs I usually do one real egg and add beaters to stretch it even more.

  • Sounds like your salads were lacking protein and fiber to help keep you full. Most salad ingredients aren't that high in fiber. Adding beans would help. And, of course, a protein source like chicken, tuna, or shrimp. Eating just salad greens is not providing all the macronutrients the body needs. It's great you're enjoying eggs and potatoes.

  • There's a chart somewhere tabling the data from a study done on satiating foods. Brown potatoes were first by a wide margin followed by brown rice

  • Good find OP. I also love that both can be fairly easily cooked in an air fryer (which I picked up last year and have been loving).

    You can hard-boil (I guess parboiled, technically?) eggs by cooking them for 15-17 minutes at 250F. 15 has a slightly gooey center stick, 17 is fully done. Can easily do 4-6 at a time, and they are shelled easier than any I've ever boiled in water.

    Potatoes... lots of options. Biggest tip I got on here: microwave them first (after poking many times with a fork or cutting them open). 5-7 minutes of microwaving before putting them in the air fryer cuts down the time there by at least half. You can cut them in half for a baked potato (air fryer at 380F for 15 minutes after you've microwaved them), hasselback them, shave them into hashbrowns, cut them into cubes for breakfast potatoes... tons of options. As long as you don't add a lot of oil, butter, cream, or cheese, they're super healthy.

    I love fried potatoes and eggs cracked in at the end and scrambled in, but they can add up in calories fast with the frying oil! I also would love to hear others methods of cooking them!

    I use a little spray of oil to cook (OK lightly burn) some onion in a pan while my small potato cubes are working in the air fryer and then combine them with just enough water to deglaze the pan.

    Putting seasoning in with the onions+ (sometimes I add jalapenos, bell pepper, garlic, spinach, etc) works a lot better for me than trying to figure out how to make seasoning stick to air-fried potatoes without adding the oil I was trying to avoid in the first place. :)

    How do you cook and flavor this combo? I think Ops post is a good one and want to try it.

    I usually bake like 5 potatoes at the beginning of the week and then in the morning I reheat a potatoe and make some runny eggs and plop them on top. Great with salsa too

  • Fried potatoes and eggs were a staple of my childhood. Thin-sliced potatoes fried brown in the pan, then scrambled eggs added in the last few minutes. Lots of ketchup on top. Still crave it!

  • Potatoes are incredibly underrated. They’re actually really healthy if you don’t soak them in butter or deep fry them, and they are delicious and versatile enough to be used in tons of different ways.

  • Sweet potato, scrambled egg and homemade kimchi or homemade sauerkraut helped me lose a bunch of weight a few years ago. (Add half an avocado to either if you're willing to up the calories a bit)
