Why on earth did I sleep on them for so many years??? Does anyone have any recipes or ideas on what else to do other than just roasting and boiling them? I could eat them plain all day so I do not really care if it is boring or fun, I just want some variety so I don't get sick of them LOL

Another little hack. Goya black bean soup, cook it down on tbe stove top and you wind up with seasoned black beans.

Have you tried different kind of sweet potatoes? My grocery store has purple Okinawan potatoes & "oriental" sweet potatoes (the sticker says "Dynasty"). I am completely hooked on the Dynasty ones, I just microwave them until tender & add a little salt butter or cheese. So good!!
Okinawa sweet potatoes are the best!! Once I tried all the other variations, I can’t go back to the orange ones. I also love the white Hannah ones and the Japanese ones for their sweetness, but their texture isn’t as fudgey and rich as the Okinawa.

I cut mine in half, place it face down/skin up on aluminum foil with every little olive oil and stab 100 hole into it. Bake it at 425 for 40 minutes and then mash it. It then becomes my dip for chicken sausage. A meal I had every day last week lol

I got the idea from a tiktoker who uses mashes potatoes from Popeyes as her dip for their blackened tenders! It's soo good. Esp if you make it at home, no salt or butter added :)

ive been mixing some of that protein, 1.5tsp of butter, and the insides of the sweet potato all together then putting the goop back into the sweet potato like a dessert twice baked! it is so fire 🔥
to cook the sweet potato, i stab it with a fork all around and put it in my airfryer at 400°f for 35-40 min (or until fork goes all the way through without resistance)
Garlic butter smashed’ sweet potatoes with Parmesan
Slice potatoes thickly, leaving skin on. Boil until tender Transfer to a baking sheet lined with parchment paper.
Melt a few tablespoons of butter, garlic and chopped parsley to a pan and brown it. I add a bit of cinnamon and nutmeg to this while rendering.
Smash the potatoes slightly with the back of a spatula. Use pastry brush to brush garlic butter on top of them, then sprinkle a little Parmesan cheese on top.
Broil for a few minutes until cheese bubbles and outside is toasted.

All the rage on tic tok. Air fryer Japanese sweet potato and when done push a sweet chuck of cheese right through the end. Back in the day use to go camping and throw a few sweet potatoes in the fire and added some maple syrup. Easy and delicious

I roast a bunch of cubes (steam first to make it faster, then toss with a little oil and seasoned salt and air fry or bake). I like them with cottage cheese on top, or fried eggs or chili. I keep the cooked cubes in my fridge and reheat through the week.

Cut them into slices or cubes and bake, they will caramelize a bit, so yummy! We also use them in curry . My husband and I love sweet potato and laughing cow cheese- maybe strange but great combo! I will often just microwave a sweet potato when I’m lazy and add toppings

My mom wrapped them individually in newspaper and they'd keep for weeks. Kept in the "dark and dry" but not airtight. I often cook and freeze them too.

I can’t stand sweet potatoes. Especially at holidays with marshmallows on top. They’re just too sweet to be a vegetable.

I’m digging out my air fryer this week to make sweet potatoes at fries for hubby. Better for his blood glucose than white potatoes.
Bake them then fridge em overnight. They become a resistant starch this way so even better for you.

oh man, i LOVE sweet potatoes. loaded sweet potatoes are great; beans, vegetables, some sort of sauce, etc. some people go sweet with peanut butter, maple syrup, and so on. mashed sweet potato is good on its own, but i like to use it as the topping for cottage pies. there are so many sweet potato soup recipes out there. go crazy!
White sweet potatoes (or Japanese) sliced topped with salt/cinnamon and air fried. Dip in maple syrup or Greek yogurt. It’s mind blowing. I have it most mornings for breakfast.
I also put then in basically everything. If I want a sweet snack I bake it, cut it open, drizzle a tsp of honey all over it and dust it with cinnamon.
I like using sweet potatoes in a breakfast scramble. Air or pan fried sweet potatoes, egg whites, and some peppers n onions. Maybe some avocado if I have it. Top with some hot sauce.
You can make your own potato chips (crisps) in the air fryer really easily. It helps to have a mandolin slicer but it’s not necessary. I do mine with garlic powder, onion powder, chilli, cinnamon, paprika, salt and pepper. They’re so spicy and delicious. Example recipe here.
Roasting them in coins or diced into small cubes. In vegan tacos with hummus + additional toppings of your choosing. There’s a vital instagram recipe of roasted whole sweet potato stuffed with cheese at the end.
Make a breakfast potato. Roast whole then add granola cinnamon yogurt and peanut butter. Also slice like chips and season with cayenne Blake pepper and salt. Or cube them and roast. I like to make them spicy since they are sweet.
For breakfast, I like to dice them into quarter inch squares and fry em in a pan with ground breakfast sausage or (turkey sausage). Then, once that is all browned, I mix in scrambled eggs for a really filling breakfast.
That meal stores really well, too, so I can have it a few days throughout the week. Sometimes when I reheat, I will do it in a pan with some chopped fresh basil and halved grape tomatoes.
Peel and dice. Drain, rinse, and pat dry 1 can black beans. Toss sweet potatoes and beans w olive oil and taco seasoning (or chili powder, garlic, cumin, and salt). Roast at ~375 for about 30 min.
Toss a bag of cabbage slaw (produce section) with lime juice, chili powder, and salt to taste.
Serve as tacos w salsa verde or a lime crema sauce.
I’m lazy. Stab the skin and throw it in the microwave. Cover or wrap in foil, let it sit for a little bit, cut open and eat however you see fit. If it’s a side dish, I’ll typically go with cutting it in half, slicing into the insides, smear on a little butter, sprinkle salt and brown sugar, and eat it with a spoon inside of natures bowl lol

We just made a big pan of sweet potato medallions roasted with shallots and chicken sausage, then topped with hot sauce. It was a super easy and delicious meal! I dunno what it is about sweet potato paired with sausage but it's incredible. 🤤
I cube them, toss them in olive oil and season with chili powder. My fav is penzys chili 3000 but others are delicious too. It's spicy and sweet and phenomenal

We have boiled them a bit to get them super soft then mashed them up with different seasonings and a bit of cheese, and then popped them into a waffle iron to get them super crispy on the outside. We paired it with some high protein/high fiber chilli and it was delicious!

Try Japanese sweet potatoes. I eat one every night for dinner.
Let them sit in the oven for 2-3 hours after roasting, even better overnight to let the sugars develop. They get almost custardy and super sweet.
Make them a base for bowls with cottage cheese/ protien/ avocado/ hot honey

My latest obsession is the Trader Joe's chicken molé, black beans, corn, a light sprinkle of lowfat cheese. I pop that on a Korean sweet potato and bake it until hot and delicious. Then, I drizzle a "sour cream" made from blended cottage cheese and lemon juice.
Another good topper: French onion navy beans on top, slice of cheese, bake it until it's bubbly, and inhale it all.
my go to breakfast bowl is cubed baked sweet potato chunks with the skin on, tossed in oil, cayenne, salt and garlic powder. baked until some of the smaller pieces are crispy. then i add cooked ground turkey, baked cherry tomatoes (i air fry them until the skin starts to crisp up and peel back), 2 eggs over easy and pickled onions + hot sauce. i eat this practically every single day lol. sometimes ill add black beans if we have leftovers from dinner or something. so good and SO filling
Thai style- Cook potato’s in oven, find best peanut butter/sun butter Thai sauce recipe. Cut open potato’s halfway done, Pour garbanzo/chickpeas over them, or extras on the side- raw broccoli, baby corn(best volume veg), mushrooms, snap peas, cut carrots, pour sauce lightly** over them, too much ruins it, put back into oven until all cooked. Or stir fry separately and add on.
I love the smell of sweet potatoes baking. With the purple colored ones I often rub salt on the outside of them before and its divine since they get bring out the sweetness.
I do lean pork chops in the instant pot with onions and thinly sliced apple and bbq sauce put the sweets on top and then set in and forget it. We shred the pork and top the potatoes my family usually add cheese and sour cream
They’re one of my favorites too! I usually have them just baked whole and eat the whole thing including the skin- it’s also really good baked with a little butter and some sage. Most of the spice mixes from Trader Joe’s if you have one are also really good on sweet potatoes.
