This whole “cake” is 250 calories only. I’ve seen this recipe all over Instagram and finally decided to try.
300g peeled apples 20g gelatine powder Water
Also added a splash of no calorie coffee syrup for sweetness and a shake of cinnamon.
Peel and core apples. Cook in a pot with a bit of water until completely soft. Recipe called for 50ml water but it kept evaporating so I added more a few times. Once cooked, puree with an immersion blender or just blend. Add gelatine (I bloomed it in a bit of water but I think it’s not necessary) Then whip on high in a stand mixer for 15-20 minutes. I used hand mixer. It’ll go from brown to light and fluffy and will triple in size. Refrigerate for a few hours.
Does it taste like marshmallows? No. It’s sort of a weird apple-ey sponge “cake”. I have to say, I found it super delicious! I’m not sure if it’s better than eating 300g of apples though. Raw apples take longer to eat whereas this sponge disappears quite fast. But it’s a fun and healthy dessert.

I made this last month. I enjoyed it but for the amount of effort it wasn’t really substantial enough. I found it just dissolve in your mouth & the whole plate was gone in a few minutes. Haha. It was a pleasant bite texturally though.
Yes, that was my thought as well. I feel like eating the same amount of apples takes longer. But I also think that it could be customized a bit. Maybe drizzle some chocolate on top or mix in a few chocolate chips and nuts. More calories but also more fun than just apples. I also found that the process took time and it was the time that I didn’t think about eating. Haha 🤣
I think it needs some texture! Maybe graham crackers or caramel sauce 🤔 Then it could almost be a faux apple pie

Yes. That is correct. It starts with this. So, it needs a lot of time to go from apple puree in brown colour to something fluffy and light and triple the size

You used like a handheld electric mixer?
Yes, I was lazy and didn’t want to get my stand mixer out. But using a handheld electric mixer for 15-20 minutes is annoying. I wouldn’t recommend

I know. Haha. But once I started, I was committed. Definitely will not be doing it again and will be using the stand mixer instead

Marshmallow in general takes a long time to reach "stiff peaks" (10+, unless it is very small quantity), and it is very important to not stop before you get there, or you will end up with some bubbly jelly mass rather than marshmallow.
I've been referring to it as "Apple Sponge" and typically make mine with unsweetened applesauce. Didn't think about adding some zero sugar coffee syrup but might give that a try!
Would it work to just use applesauce?
Someone commented below that they use apple sauce but I don’t know. My pureed apples were much thicker than regular apple sauce

My guess that it wouldn’t work unless you use enough to makeup enough gelatine. There’s less gelatine in 20g of jello than actual 20g of gelatine

From what I read - yes. You are talking about agar agar, right? I’ve never tried it but I read that it would work. You may need to adjust the amount. I’m sure there are conversions of regular gelatine to agar agar
You can find halal gelatin in most middle eastern grocers unless you're somewhere like rural South America
It should work but the texture might be a bit different. I feel like agar agar can be firmer than gelatin

I'd guess oxidation of the apples.
Because that’s how apples work. When they cook they turn different colour, just like when you cook apples for apple pie. They start white and turn brown during cooking. Yes, sugar free coffee syrup only because I wanted a bit of extra sweetness, any flavour would work as it’s just a bit. Also not necessary.

My kid and husband didn’t like it either. I’m already planning making it again as I loved it so much
entirely unconnected to it I did Pomona's sugarfree pectin with water and clear green apple squirtable flavoring and a splash of unsweetened vanilla almond milk and whipped it up in the blender; I don't think I did it long enough as someone mentioned here; I put it in the fridge to solidify and it mostly stayed but there were small congealed chunks, so I put the rest back in the blender with frozen strawberries and the non-congealed liquid in the bottom of the pectin stuff and added some stevia liquid (& a lil more unsweetened almond milk, I think) and that was divine
u can microwave covered apple slices btw, to cook it faster :>
