What to remember about the recipe: 2:1 liquid to lentils would completely absorb. So 4:1 will give a nice thick texture. You don’t need to soak lentils, even whole ones like in the recipe. You do need to boil them for a minimum of 20 minutes.

I don’t think I’ve ever had chili with potatoes inside. I sure it’s good because I will often put veggie chili & vegan cheese inside of a baked potato. But actually cooking potato chucks into the chili is interesting.
