Consider the surroundings. Even though her sprite itself is the same color in both, she is surrounded with similar tones in Deltarune, which causes her color to pop more.
possibly because of the outfit she is wearing compared to UT combined with the extremely orange Hometown making her feel darker than when she was in her brightly colored lab in her white lab coat.
the same thing happens with Toriel in the Dark World. she has the same fur color, but the bright blue outfit in the dark colored environment makes her feel lighter than in the Light World. At least that’s what I think is going on.
Maybe they had no oranges in the Underground but they do in Hometown so now she can drink lots and lots and lots of orange juice and it turned her a lil orange hehe
