I figure slimes are a non-Newtonian fluid so if they hit something or get hit by something with enough force, their bodies solidify and resist the force. Sort of like living body armor.
I like the detail of the slime leaving a trail as it rolls over grass. Presumably it consumes plant matter as it rolls over it. There are probably many trails across the wilderness, the key sign that slimes are around the general area. Having no complex sensory organs, slimes probably just move forward until they hit a wall, then turn 90 degrees randomly until they can keep moving forward.

But the thing is, they do seem to have some form of predatory instinct, jumping over to attack both threats and prey. So I don't think they would only consume plant matter.
oh sure, they'll consume anything carbon based, plants just don't resist them. due to their fairly small size, and slow speed combined with not being smart at all so they're easy to avoid, they're probably more of a nuisance than a serious danger to animals.
though it should be noted that real life giant single celled organisms (at the bottom of the ocean) don't have giant organelles, they just have a crapton of them
Though, I think I need to clarify I didn't think too deep about their physiology. Just remembered a bit from my school days and thought it would look neat.
