Definitely probably the player character—but I expect that there will be some version of the Mass Effect “Choose Your Gender” customizable stuff Casey likes to do.
The trailer is pretty similar to Mass Effect 4's vibe. Wouldn't be surprised if the Jedi in the trailer was this game's Bastila/Liara type of secondary protagonist while the main character is a fully customizable character as is traditional for an RPG like this.
They can still create non canon stuff. Legos Star Wars isn’t canon, visions, etc. Old Republic is still a thing even has an expansion coming and none of it is canon
