First question you have to ask yourself is how much time are going to put in. Then the next thing is you have to call your yard and ask them the prices on insulated #1 and #2 wire and #1/#2 copper. Next strip out 10 pounds of each and time yourself doing such activity. Then get out the calculator app on your phone and do the math. As for me, I've done the math.

I would sort that by category. The MC cable strips easy enough, with an MC splitter, to change it from #2 to #1 insulated. After that, it's sort & haul.
I have a big pile of stuff. I haven't hauled any in, in 2 years. The price difference on #1& #2 insulated was #2 was $.90 / lb & #1 was $1.20 / lb (or something like that) . So any effort to convert the #2 to #1 had to be very fast.
I wire a lot of pools. I have 2 or 300 pounds of pool light wire (extension cord). Some here say stripping the jacket with change it from #2 to #1. I look at that price & say "why bother!"
Looks like every bit of that white wire is solid house wiring. That's #1 if you strip it. If everything else is copper I'd probably strip it all cause there's a lot there
You got different type wire.. if I was you I put them in categories and if it's worth strip it but the amount you have I would strip anything that I can

I personally strip the 2-wire as it's very easy. Any communication wire goes as is
Get an electric one with a foot pedal. Best thing you'll ever buy for scrapping and wonder why you didn't get one earlier.
Yes you can get a wire stripper for as low as $20 on Amazon that have a cranking handle or a adapter to hook up a drill

If solid wire or 14awg or thicker strip otherwise youre losing money
