I've read through the first 12 chapters of this and I am having a hard time getting through it.. is it really good enough to keep pushing through, or is the book exactly what I've been reading up to this point? thanks..
Omens of the East on Royal Road, in world terms, for knights are different, but the idea is the same regarding serving Houses or lone drifter sort of thing, but you'll get used to the word. Additionally, the recent chapters follow the protagonist as they deal with nobility, along with some crazy, tense moments.
Outcast in Another World kinda fits. Mc uses a sword, he isn't really a knight, but there is definitely some politics and war stuff involved in the plot
Oh, also, Path of Ascention MC uses a sword and armor, so kinda a knight. And the politics and war is also a theme, with many factions being fleshed out the more you go. Although the war doesn't start until much later. And by then the MC starts to use more tools than just the sword
Oathbreaker: A Dark Fantasy Web Serial
A broken former paladin now serving the divine powers of an absent god is going through dealing with plots of traitors, fae, demonic cultists, demons and the undead.
You might enjoy my faerie knight series. It’s stubbed and on KU, and complete at three books. It was my first Royal Road fic, and I was trying to hit basically everything on your list.

It blooms a lot more from there. Book one is pretty isolated to its "location" but the items acquired and lore drops are great
Red rising, gunmetal gods
Gunmetal Gods—an astonishly impressive piece of self-publishing and one of the most underrated series I've read.
If you like manga you can read Kingdom. Instead of knights it has legalist meritocracy system but other than that it fits the bill.
Soldier's Life
I have read it, one of my fav , along with iron blooded.

A practical guide to evil
It sounds like the perfect fit. It's really good too.
The Red Knight is extremely solid for this. Not progression fantasy per se, but there is hard progression in there.

Not so much Politics but The Knight from Nothing(Hedge Knight series) is about a Knight and it has alot of swords and fighting.
