I think we’re a little bit more like Eevee. Base we are normal type, but then we can get other typings from our environment because some humans are straight up psychic others humans can box buff as hell Pokémon.
I mean, the humans better have put precautions up in case someone tried to do that. Also isn’t it just because we cannot shrink or something? I’m pretty sure Pokémon can just shrink to fit in Poké balls. I don’t think humans have that ability and that the reason we can’t get caught or humans just put precautions to make sure they can’t catch each other.

I like to think humans from the Pokémon universe are stronger than normal humans because they evolved over generations to live along side Pokémon. To find out exactly how strong humans in the Pokémon universe are, I would be calculate human strength in comparison to the average of irl animals, then calculate irl animals average strength to compare to Pokémon’s and then multiply Pokémon universes human strength by the amount of times Pokémon and stronger than animals.
Fun Fact: in the Japanese version of Diamond and Pearl a book in the Canalave library says that once upon a time people and Pokémon were more similar than they are now and that there were even marriages between people and Pokémon. A bit strange, but I always interpreted this to mean that humans in the Pokémon world are a creation of Arceus just the same as everything else.
I mean, Ash is somehow able to pick up a Pokemon weighing hundreds of pounds, bend/break steel, catch up to vehicles, and load upon loads of durability feats from being abused by pokemon. Dudes been frozen, burned, shocked, beaten, been mind scrambled, and so much more. And he one time even did Bullet Seed (The attack) as well if not better than actual Pokemon.
I always said that there is a reason there are a limited number of Pokemon "trainers", and people in general, in the world of Pokemon, and why there are smaller towns and a lot of wilderness: it's cause Pokemon are scary and dangerous AF, even the small ones. You need to be a certain type of human to be able to withstand pokemon abilities, or simply the collateral.
I mean, Pokemon stories usually involve some world-ending (in some cases universe-ending) events because pokemon were involved.
