Using my simple dough recipe, cold ferment for 2 days, baked on a stone, preheated to 550, baked for 11 minutes. Was very tasty with spicy salami, onions, mushrooms

  • Thanks for the love. Here is the dough recipe I use. I don't weigh my ingredients, just measure.

    Combine 1.5 cups warm water with 1.25 tea spoon of yeast, stir to dissolve. Add 3 cups unbleached all purpose flour. I've tried fancy 00 but I find all purpose turns out better. Can also use bread flour. Add 1.25 teaspoon of salt. 4 teaspoons olive oil (helps crisp dough in regular oven). With a spoon mix to combine everything for a minute, sometimes I add a splash more water, let sit 20 minutes in bowl.

    Dump bowl on floured counter top and knead for 1-2 minutes, split into 2 dough balls and knead each for another 1-2 minute. Add more flour to counter as needed.

    Put dough balls in large oiled bowls and cover with saran wrap. Let sit on counter for 10 minutes than put in fridge.

    You can than make your pizza the next day (24 hour minimum, sometimes I let sit 2-3 days).

    Take dough out of fridge 2 hours before you want to make a pizza. I have a large stone I put in the oven's bottom rack, I have an old electric stove using the element at the bottom. I crank the oven to 550 (highest it goes), let it come to temperature (takes a while) and continue heating stone for about another 30 minutes- 1 hour. Then I stretch out my dough and prepare the pizza on a peel, launch it onto the stone and bake for 10-12 minutes. Boom you got yourself a nice pizza!

  • Looks awesome! As a fellow mushroom fan I recommend you try a pizza with the raw shrooms cut as thin as you possibly can. Almost shaved. Use more than you think you need. It is my favorite way to make a mushroom pizza.
