Im pretty familiar with Dragon Star, United Noodle and the Asian Mall. Any other must visit grocers for hot pot supplies? All the rolled frozen meats and dumplings and fish cake, ect.
Hot take: Getting a few nicer cuts at the butcher counter is a massive level-up over the frozen packs of meat. Otherwise, Shuang Hur on Nicollet Avenue will have what you need.
I like Dong Yang up in Hilltop for produce, broth ingredients, and fish cakes, but the thin sliced meat at United Noodle can't be beat
Ha Tien or Market Fresh
Besides the Asian supermarkets, you can sometimes find the rolled meat at Costco Business Center

I’ve seen (smaller?) containers of thin beef for hotpot at regular Costco in the area too, just can’t remember which one(s)
I've seen lamb, I think at Eden Prairie.
