Bull's Horn has the best smash burger in the metro, and absolutely nothing will convince me otherwise. My husband and I go there all the time. Dive bar atmosphere, pull tabs, amazing food and beer -- there's no better place to spend a Friday night.
My top burgers in the twin cities (I think smash burgers are the best):
- 1st Gus Gus Cheeseburger: The thick globby cheese and carmelized onions are what makes this burger. So worth it, but it’s in St. Paul
- 2nd Kizzo: Cooper Burger/ this is closer to downtown
- 3rd Russel’s: Crocus Hill Burger
- 4th Chilango: El Chilango Cheeseburger (nvm this one closed :( .. )
I wasn't there, so I can't be the Truth here, but I believe Parlour was opened and is still operated by Jester Concepts which admittedly has grown quite a bit since then so it probably feels like its run different.
The inside baseball I know about the parlour burger is there are multiple people who may want to take credit, but the one I know of most credibly is the chef who opened Dario last year, should you want his food.
the good news is one of the best burger places in the city is right downtown. the bad news is they're not open for dinner. If you can settle for a lunch burg by all means head to the Band Box Diner
Just make sure to order the pickled green beans as a side. That burger is so fatty (Waygu Butter Burger) that imo it goes way harder if the first bite is as good as the last by cutting it with something acidic.
Parlour for sure. Alternative: the burgers at Chloe are very very good for lunch (they have the old Vincent burger, for us old timers) and is on par with Parlour price wise. Red Cow is less sexy but has good burgers.

That house made American cheese is so fucking melty. And the crunchy edges on the burger are premium. It's what you get when a top class chef decides to so something simple and perfect.

When I lived in Uptown I had their truffle burger (if I remember correctly on what it’s called) and it was one of the best I’ve had. It was pricey though but worth it.
I honestly like My Burger the best out of all the ones I've tried in the city so far. I love the crispy fries. The burger is light, flavorful, smashed and not too greasy. I'm nearing my 40s, so these criteria for me have started to become more important. At least when it comes to eating there, the fries become soggy during takeout.
All the other fancy restaurants are just often "too much" for me. People from here are trying to convince me that Juicy Lucy is the thing to eat, and personally, that feels like when Atlanta people recommended Waffle House or when I recommend people to eat the "Calskrove" from where I grew up. "It's for the experience"
It's always a toss up for me between Bebe Zito in Uptown and Bulls Horn in South Minneapolis. Right now I'm leaning towards Bebe Zito as the best in my opinion.
NOLO’s has a very basic but very good burger. You can also order it downstairs at basement bar and there are bar games like pool, pinball machines, and darts if you’d rather have a more casual time.
Culvers. All these other places in the comments cant compare to a culvers deluxe with onion rings eaten fresh inside, and youre not paying an arm and a leg.

Cafe Alma's double cheeseburger is awesome with a side of the crispy smashed potatoes. It's on the bar menu in the evenings.
Animales is just outside downtown and has a killer burger.
Also killer BBQ after 4pm.

Nighthawks is on 36th in South Minneapolis and I love their burgers! Good cocktails and beer selection too!
I’ve got a few to try but parlour St. Paul is my all time with the bacon and runny egg.
Been to grocers table quite a bit lately and their burger with seasoned fries and special sauce is pretty excellent for a standard burger.
If it's limited to downtown, probably hit Red Cow. Parkour is better, but Red Cow is a more casual dining experience.
The burger at Coastal Seafood is basic as fuck, but I crave it weekly.
