put a multimeter across the battery terminals. check voltage. Start the car, repeat. should be right around 12 just battery, and higher - 13/14 when running.
If it starts when you jump it and dies when you take the cables off then most likely to be alternator. It can’t charge and your car can’t run without the electricity. The dancing gauges are not abnormal in this case. When the modules don’t get the voltage they need they act up in all kinds of ways.
has your car been outside in the deep cold? your battery could be stone dead. if thats the case, bring it inside to warm up and trickle charge. if you still die then its one of the two. check the date of manufacture on your battery.
