I have a similar trope of immortality being a curse without human connection in one of my stories. He doesn’t give up immortality for love, but he does reject godhood for love.
I think she "reset" their lives with the spell. The spell set their age to when they first met, so now they both can live a normal life together and die together
My interpretation is: She binded her immortal life with his so they are both effectively immortal at the cost of having a risk when one dies, both of them die making each other's Achilles' heel.
By how many times I've seen it in so many stories or manga or tv shows, thats the conclusion: immortality is a curse. You live forever but always feel stuck as the world moves on and even in the cases where immortality is interpreted and actually is just very long life-span compared to an average human today, its still not that worth it. Sure, you see some things and meet famous or even help create famous people and heroes, but if they all grow old while all feels to you like days... honestly, its just a messed up way of life if it even could be called that and the classic thing, many indulge in urges and vices and the classic nowadays, 'I've had a million lovers and wives and some beings that cannot or refuse to be gendered'.
Awwww! Cute.

Wait. If he turned young instead of her turning old, doesn't that imply she just made him immortal too?
