The only thing I personally consider “wrong” is the hole. Lived in Beijing for 10 years and don’t think I ever saw a baozi with a hole, we are trying to maintain moisture, not release it.
The crimps themselves just look sloppy. Need to be thinner, more uniform, you got some that split and others where the dough looks torn. They go in all different directions, and are all different sizes. Should be a neat little spiral that hits a center point. A perfectly SEALED little package that bursts with molten juice that burns your fucking face on the way to the subway.
Yeah outside of the hole everything else is purely aesthetic and something I’d expect from a home cook or street vendor. If it was a dedicated bao shop it would def be neater. And I get it, my jiaozi and baozi aren’t anything to write home about, but man when you get that perfect one it feels GOOD.
