Just this month I fully switched to keto and also created my first meal preps. The only way to make this transition work for me was giving away all of my carby food and replacing it with ready to go frozen meals that I prepped so I can just chill after work and try to not think about Costco cookies. I absolutely love the lack of stress meal prepping has brought.
Stuffed Salmon & Cauliflower Risotto (10g net carbs per serving)
Baked for about 30min @ 375F and then broiled for about 3min. Cauli risotto is actually a lemon dill variation and was squeezed of as much water as possible prior to seasoning. Red wine vinegar was the "eureka!" that was added to the Cauli Risotto that finally made the added flavors shine through.
Pork w/ Mushroom Gravy & Spicy Green Beans (9g net carbs per serving)
Pork was cooked in the air fryer. Mushroom gravy was a reduction. Normally I would have made a corn starch slurry to save time, but the reduction definitely made things more rich in a good way.
