My Mom was born in Ireland, met my Dad in England, got married, had me, and moved to Canada 3 months later. I became a Canadian citizen when I was 12, before that I travelled on my moms passport (yup way back in the day, no kid passports required!). Anyways, got my Irish passport in my 30's and I've renewed it since (so dual Canadian/Irish, never got a UK one). I understand that my daughter has to be registered on the foreign birth registry, but can I do it either as the child of an Irish born Grandparent (my mom) or some other category for an Adult applicant who was Irish, but not born in Ireland? I'm not naturalized, was never on the foreign birth registry, etc. Am I out of luck, do I have to get my mom's stuff so she can be registered?

You’d fill the FBR application out on your child’s behalf, on the basis that your child’s Irish parent (you) was born to an Irish person born in Ireland. Your child would become an Irish citizen as of the date of FBR registration (unlike yourself, who have had it from birth, no FBR, no naturalization). You can start your child’s application at https://www.ireland.ie/en/dfa/citizenship/born-abroad/registering-a-foreign-birth/#minor-applicant
The set of documents you require are listed under "Minor applicant applying on the basis of an Irish born Grandparent" on this page (or adult applicant if your child is already an adult, obviously).
You would always have to do it through your mom regardless as well as include your docs as the link. You weren’t born in Ireland so but are an automatic citizen. Your daughter’s application needs to be completed based on your mother being born in Ireland.
