as to the lovely soaking of the syrup and its more crumbly texture, especially when when combines with crumbed bacon or sausage, the humble and modest pancake allows for a wider range of textures when made with things other than pure white wheat flour(the blandest of all flours). It more robust and hearty flavor when made with this in mind, tends it to be a higher form of pan made cakes.

1 cup each of: flour and milk 1/2 tbs each of white sugar, baking powder and vanilla extract 1 egg
Mix until smooth.
You’ll never want boxed pancakes again.
1- egg, 1C flour, 1C milk. 1/2 tsp salt, 3/4 tsp baking powder, 1 TBSP sugar, (sift into flour). 1/2 tsp vanilla, 1 TBSP oil (mixed with egg and milk). Mix all together, let rest for 2-3mins before using.
