Now that the temps are well below 32 degrees, I’m finding a lot of eggs frozen in the carton. I throw out any with cracked shells. Are the others ok to eat or cook with?
Eggs are weird if they get frozen whole. It solidifies the yolk. Ideally you would want to scramble them before freezing. You can see how they turn out, but that's the general consensus.
I scrambled a couple and the white and yolk kind of stayed separated. Tasted ok though. Looked like this. Didn’t blend together and slightly rubbery texture but edible.

About 3% of eggs can contain salmonella, or so I have read.
