That's debatable. I remember the early days where even if the entire game was played without, they jammed in some random bs mini games that only used the touch screen (looking at you, Mario 64 DS). Plus the zelda games had no reason to only have the option for movement be touch screen.
Mario 64 DS can be played without the touch screen. The "random bs mini games" were entirely optional, and anything relating to the original game did not need a touch screen.
I'd say the most annoying thing about the Zelda games wasn't the touch screen, but the mic requirement. You're not wrong that there were certainly games that required gimmick controls even when they weren't needed (much like the Wii), but also like the Wii, there were many games that made those controls optional, or at least severely limited their use. Big games such as Advance Wars, Final Fantasy, Kirby, Pokemon, Kingdom Hearts, Castlevania, Mario Kart, Animal Crossing, and New Super Mario Bros didn't need touch controls. There were also several others that made smart use of touch controls, such as making it easier to use items as opposed to having to navigate through nested menus with the D-pad. I remember Etrian Odyssey had a great mapping feature that allowed you to draw your own maps of the dungeon.
There were even games like Mario Hoops and Resident Evil that allowed you to choose between touchscreen or d-pad controls. Similar to the ability to turn off 3D on the 3DS, devs knew that not all gamers would want gimmicks forced down their throat, even though they were probably heavily encouraged to make use of the touch screen. Thankfully, they blessed us with some solid titles that could be played without any bullshit.
