My grandmother made the mist wonderful Stewed Chicken & Dumplings, because the chicken was fresh from the hen house, even if it was the oldest hen. Our modern grocery store chicken is almost as good.
Brown chicken pieces, both sides. Season to taste. Add chicken broth, sliced onion, minced celery, and simmer untill the chicken falls apart. Spoon biscuit style dumplings on top of the simmering stew. Cover and simmer for 12-15 minutes. We live at 7000ft elevation so everything takes longer, I cook it for 15 min. Steam does the cooking, so don't lift the lid until it's done. My grandmother lives on.😀
Definitely recommend the bean addition. I would also suggest taking a bit of the beans and potatoes out and mashing them, then add back into the pot for a little heartier soup

It's a Christmas staple in my family; we're French-Canadian, and even though my mom and all her sisters grew up eating the same meat pies my grandmother made, they all do it differently. The only thing we all do the same is the ratio of ground pork to ground beef, 3/1.
My grandmother only seasoned with cinnamon and clove. I use cinnamon, clove, salt, pepper, garlic and a little thyme..it can be overpowering so I use a light hand on the thyme. I've also tried adding a little cumin; haven't decided if I actually want to keep doing that yet. I dont like to use onion powder for this, I use actual onion, following my mom's habit of chopping it so finely it's basically liquefied.
Some people add a little maple; I dont care for that myself. I was astonished to see my exMIL's tourtiere meat was bright pink; she added red wine to hers.
Like the other commenter said, there are as many recipes for this as there are memeres that have been making it by vibes for 80+ years. Even in my own extended family we have multiple recipes. this one is pretty close to my recipe. I like to add mushrooms cooked way down to bulk out the filling when I don’t want to add more meat. I also grate my potato raw and cook it into the meat mixture while it’s simmering on the stove, rather than boiling and mashing it separately.
You serve it with brown gravy and tomato relish or ketchup on the side. Usually I do a nice green salad or green beans for a vegetable.
We’re making crab potatoes au gratin tomorrow. Absolutely delicious, easy, quick, and reheats well the next day.
We slice potatoes on a mandolin. Warm heavy cream with nutmeg, minced garlic, salt and pepper in a large pot and add the potatoes until they’re warmed and starch starts to release (thicken). Then alternate layers in a shallow, buttered dish with crab. Sprinkle smoked paprika and shredded Gruyère cheese and bake until potatoes are easily pierced with a fork and the cheese is crusty brown.
Im a meat eater but love a good vegetarian or vegan option too. Idk if OP would consider this a casserole but I just made Nisha Vora’s instant pot lentil shepherds pie and it was very similar in flavor to my favorite beef pot roast recipe. Obviously not quite as unctuous w/out beef fat and flavor. It was even better the next day and froze well.
Cottage pie (ground beef) or Shepherd’s pie (ground lamb). Delicious with vegetables and a topping of mashed potatoes baked in the oven. I don’t know if it’s a casserole or maybe a meat and potato pie?

To make your rice more authentic, season it well with salt and add a clove of minced garlic and a teaspoon of oil when it comes to a boil.
I sometimes do that. But often, we like the balance of the plain rice with all the other flavors :) but good tip
