I’m planning Christmas dinner for two, and don’t want to buy a lot because we’re (hopefully) moving next month.
The main dish is a pork loin with cranberries and orange, roasted in a dutch oven. The recipe calls for green beans, which neither of us care for.
I’m looking for festive ideas that aren’t super high effort, and am located in the US on the east coast.
I would just make a nice salad with something bitter and bright - raddichio/endive or something like that, with a mustardy vinaigrette and maybe some capers or olives if you have those in a jar lying around.
and then a potato in whatever form you like best.
Bacon wrapped asparagus sounds like it would go well with the pork. Merry Christmas!
I did a ine sheet pan pork tenderloin meal for two on thanksgiving with roast sweet potatoes and asparagus. Started the cubed sweets which were tossed with some minced shallot and garam masala 20 minutes before searing the seasoned tenderloin on all sides, added that to the sheet pan along with asparagus spears tossed with olive oil, salt and pepper. Finished in the oven for 20 minutes.
Sauteed spinach (olive oil & salt) with some lemon juice toasted nuts would be a good side with the pork and tangy cranberries and orange.
