I don't think he knows what "theory" means scientifically. It doesn't mean scientists just guessed. Science changes all the time as new discoveries happen. Scientists praise new discoveries. They don't double down on the old theories.

This understanding of what “theory” means drives me crazy.

Scientific or no, a theory is a framework of tried and tested and true things. In economics, there is capitalist theory, and Marxist theory, broadly speaking. In sociology, there is feminist theory, Marxist theory, race theory. In music there is jazz theory, classical theory. Multiple theories can even exist in one discipline without contradicting each other.

People really need to stop saying theory when they mean “idea” or “hypothesis”. You can have a theory, and let’s say it’s backed over time by your observations and your own data points. If no one else agrees with you, the onus is on you to either assert reproducible evidence or stfu.
