Cars keep taking imaginary u-turns across main roads which causes a lot of traffic, I use the traffic mod to remove them but they keep re appearing somewhere else along the road .. is this a bug in the mod? How do i prevent these u-turns and why do they appear in the first place?

I think that you can use a road with median to prevent this.
They'll u-turn at the next intersection if you don't remove the lane connectors with Traffic.
Sometimes it helps to look at the underlying issues- where they want to go ? Maybe create a shorter alternative. I remember tho that this happened once to me without any cause. Everyone wanted to go one way and then suddenly u-turned :D so it depends
It looks like they take the right turn to take a left turn or go straight ahead, probably because the left turn detours or the straight is congested.
Removing the unsafe turns at the right turn ramps with Traffic should work.

Def see them going over medians to U-turn
^^ this, I used road builder to create a four lane highway with a median and have found any wider road needs it to stop this - add spaces for stuff to turn or face traffic chaos

Every cim is a bad driver
You can't prevent it besides using only one way roads/roads with medians. They'll do that if there's too much traffic on the main route or if there's otherwise no other path to their destination. It's a function of the AI that just makes traffic congestion worse and is very irritating.
They keep showing up because the cims in there want to go to your city. Is that the only route in?
Consider creating an off ramp and joins up with the other road.
Some drivers will always make risky manoeuvres, and cars can change lanes at any point along a segment not just at nodes. For this many cars to be making risky manoeuvres, it suggests an issue with your road design.
As others have said, either use a road with a median or show the junction just out of shot to the right - is there a way you could facilitate the left turn there?
Ok so is this just cims being realistic and making illegal turns? Meaning that it's not something that is inherent in the road itself by design... I certainly have issues with my road design as I just started playing the game
It can be both things.
Some cims will make illegal u-turns, but based on your video there is more than I'd expect to see. This suggests that the illegal u-turn is the only option to make a left turn earlier on the road, so I suggested sharing a wider picture so people can share their views on the road design.
Fix the road design > provide an alternative to make illegal u-turns > reduce the number of illegal u-turns.

Too much traffic for that roundabout. At a minimum the east/west road should have a connection that flys over the roundabout and north/south road. But for something getting this much traffic I’d look for a different interchange or maybe more options so that so much traffic doesn’t have to go through this one very large choke point.
I'd replace that whole thing with a more classic intersection design like a stack or turbine interchange. There's probably too much traffic for a cloverleaf to be best, but even that would probably work better.
Feels like you need to do a road diet and/or just rip up that entire interchange and put in like a 4 cloverleaf in there.
It looks like you have traffic coming in from the north trying to go west.
You've got traffic coming from the west having to go under ground, to join up with traffic from the south, traffic from the east, and then go back under to join traffic from coming from the north to create this massive jam.

Here's what I would do to see if that relieves the issue. I assume the problem u-turns are off screen to the top.
Red new one way streets/off ramps
Yellow erase
Create a divide road
How do you do that
Do they have any other way to turn around? It could be a routing issue
your road design is the issue
if you use traffic mod, after a intersection there is a small segment where it for some reason allows u turns. Hovering over the road will make it show up and then u can turn them off. It isnt necessarily exactly on the spot where the cars do the u turn.
You may placed a new parking spot and many cars targeted this spot. As soon it is full, they change direction unexpectedly. Same with bikes.
Solution: don’t place any parking spots or place enough parking spots
