Hey! I'm west Asian from the middle east, I have no heritage connecting me to China/ korea/ any country that celebrate lunar.
I'm really interested in chinese and korean history, culture and food (it's amazing) and as lunar is next month I wanted to celebrate it, make traditional food, learn about it and celebrate.
Is it weird? Culture appropriation or too much? I don't want to come across as weird or something hehe

Short answer: It's not weird if you do it right.
Long answer: Your concern regarding cultural appropriation is understandable, but we cannot forget that cultural APPRECIATION also exists. Nowadays, people (especially on the Internet) tend to say that anything you do outside of your culture is cultural appropriation, when in fact cultural appropriation is more specific.
Cultural appropriation is a movement of erasure, in which something from a specific culture is taken and claimed as original, not only without mentioning the cultural origin but deliberately erasing it, and often being used inappropriately, caricatured, offensively, or sexualized.
Cultural appreciation, on the other hand, is a movement of admiration, in which there is study of the culture of origin and an understanding of what is being done, always giving credibility and treating the culture of origin with respect, with the intention of expressing the admiration and affection one has for the culture, even if it is not one's own culture of origin.
Ultimately, appropriation is about erasure, while appreciation is about praise; one is about disregard and the other about admiration, ridicule and respect. And even if you do everything right, there will still be people saying you're wrong, because we live in a world where if you say "it's wrong to kill babies and pregnant women," someone will disagree with you.
Celebrate the Lunar New Year if it's something you admire and cherish; study it and do it with respect and consideration.

The West Asian Muslim Calender is the true lunar calender. The East Asian is a Hybrid calender.
