Edit: Although there's one dish I've only had once in my life, and I still think about it from time to time: fresh small squid stir fried with yellow chive and FRESH straw mushroom - the levels of umami in that dish...
Beef stew. My own method, combining a bit of Chinese style, a bit of Western style, and a bit of Borsh.
The beef needs to be lean or with only tendons, fat needs to be trimmed very well, then pan fried with wine, black pepper, and salt. The meat is to be seared to a bit beyond well done, all fat dissolved to the cooking oil, but not hard. A bit of sugar is used for flavor (maillard reaction).
The seared, fat-free beef is then stewed with veggies, my common pick being potatos, carrots, onions, Thai peppers, and half or quarter of a wombok or cabbage. The soup shall be flavored with Knorr's beef dense soup gel. The stew is finally flavored with white sauce (pan fried butter, milk, and light cream) for a creamy texture and Tabasco habanero for a fruity flavor, right before serving.
Sometimes I omit onions if I plan to also feed my pup with leftovers, otherwise the recipe is pretty stable and has not changed for years.
红烧肉
Pork is life.
Is it not too fatty? I find the porkbelly too fat sometimes when not rendering some of that fat.
Pork fat is a super food. 🫶
🤭
Some people like fatty meat, and that’s exactly what pork belly is
Rich is probably a better word. I can’t eat too much of it. Meanwhile I could eat much more of Cantonese roasted pork belly.
If it’s well cooked and mix with rice it doesn’t feel fatty. It’s probably not super healthy, but what nice food is healthy
Plenty 😅 Cantonese food for instance have plenty of healthy dishes. It’s not very heavy like Sichuan.
